recipe and hotpads

I made a big batch of granola yesterday and since I've been on a big chai kick I've created this amazing chai flavored granola.


Chai Granola
3 cups old fashioned or rolled oats. No instant!
1/3 cup local (or not) honey.*
1/3 cup agave nectar. (you can substitute with more honey but this cuts down on the sweetness.)
1 tbsp oil.
2 tbsp ground flaxseed (optional)
1 tsp ground cardamom
1 tsp ground ginger
1/2 tsp cinnamon
1/2 tsp ground nutmeg
1/2 tsp ground cloves
1/2 tsp vanilla extract

Mix together and spread onto a cookie sheet covered in wax paper. Cook in a 300 degree oven for 45 min, stirring every 10 min for even coloring. Watch it carefully towards the end because it can go from golden to burnt pretty quickly.

*Local honey is pretty awesome. It keeps seasonal allergies at bay with the added karma of helping local farmers and businesses. I used a local clover honey harvested in Colorado Springs. It was pretty mild compared to store bought clover honey. On the second batch I used a mesquite honey harvested in Mesa, Arizona. It's a pretty amazing honey, very mild with a very slight smokey taste.
